This is the absolute best hot chocolate you will ever have. It's thick rich and oh so creamy.
What's more soothing than a warm cup of cocoa on a hot winter day? This is a fast, easy recipe that comes together in minutes...in your blender! It's nourishing, comforting and just plain yummy.
This recipe actually came to be while writing a book (Snow Job), about a NY divorce lawyer who steps out of her office for some air only to wake up in the Rockies, some 2000 miles away.
“Had enough yet?”
I nodded, suppressing a shiver. “I think I need to warm up a bit. Is there a chance that we could find some hot chocolate in your cupboards?”
He trudged ahead to unlock the door of his house when it came into view. “No, but I can whip some dates and cashews together with some cacao.”
I stopped dead in my tracks. “OK, I am the last person to claim to be any sort of a cook, but you drink hot chocolate. How does your offer fit that bill?” Maybe I wasn’t expressing myself clearly.
He laughed. “Trust me.”
I shrugged. “Sure, why not.” I stopped to meet his gaze. “I wouldn’t worry about my trusting your food, since I already trust you with my life.”
RECIPE
1/2 Cup soaked Cashews
6-8 soft medjool dates (If you use another kind, you might want to soak them first)
2 Tbsp raw Cacao powder
1/2 tsp pure vanilla
1 Tbsp maple syrup
4 cups filtered water
Add to a high powered blender or Bullet Rx until steamy. This can take 3-5 minutes
Top of with Dandies vegan marshmallows and enjoy!
Psst! If you add a few more dates and omit a cup of water, then leave it an extra 203 minutes in the blender, you'll get a delicious chocolate mousse! (let it cool first), but you'll see that it thickens as it cools.
