Eat a Rainbow, Find Your Glow

Raw Rainbow Pad Thai for Two


2 zucchinis, cut into ribbons or spiralized

1 carrot cut into thin ribbons or spiralized

1 med bell pepper cut into thin strips

1 cup mung bean sprouts

2 scallions (shallots) cut into small pieces

1/2 cup shredded purple cabbage (optional)

1/2 cup chopped fresh coriander leaves


Dressing

2 Tbsp peanut or cashew butter

2-3 Tbsp Tamari

1 tsp maple syrup

Juice of 1 orange

1/8 tsp sriracha (optional)


-Sprinkle zucchini noodles with salt and lightly massage, set aside

-Prepare the other veggies and set aside.

-Rinse off the zucchini and pat dry once softened (takes about 5 min). Add to other veggies.

-Bend all dressing ingredients together and add to veggies. Sprinkle with sesame seeds and a splash of lime if you like. Enjoy!
